Twix Candy Bar Cheesecake
Ingredients:
1½ cups (about 25) crushed chocolate wafer cookies (*see notes)
⅓ cup sugar
⅓ cup butter, melted
2 packages (8 oz each) cream cheese, softened
1 can (14 oz) sweetened condensed milk
3 eggs, room temperature
2 tsp vanilla extract
20 Twix bars (fun-size), unwrapped and cut into quarters (about 2 cups)
Optional Garnish: Chocolate syrup and caramel syrup or topping
Instructions:
Prepare the Crust:
Preheat Oven: Heat your oven to 300°F (150°C). Spray a 9-inch springform pan with cooking spray.
Mix Crust Ingredients: In a medium bowl, combine the crushed chocolate wafer cookies, sugar, and melted butter.
Form Crust: Press the mixture evenly into the bottom of the springform pan to form the crust.
Prepare the Cheesecake Filling:
Cut Twix Bars: Open the candy bars and cut each one into 3-4 pieces. Set aside.
Beat Cream Cheese: In a large bowl, beat the softened cream cheese and sweetened condensed milk with an electric mixer until smooth.
Add Eggs and Vanilla: Beat in the eggs one at a time, mixing just until blended. Stir in the vanilla extract and chopped Twix candy bars.
Pour Filling Over Crust: Pour the cheesecake filling over the prepared crust in the springform pan.
Bake the Cheesecake:
Water Bath: To minimize cracking, place a shallow pan half-full of hot water on the lower oven rack.
Bake: Bake for 40 to 50 minutes, or until the edge of the cheesecake is set at least 2 inches from the edge of the pan, but the center still jiggles slightly when moved.
Cool Gradually: Run a small metal spatula around the edge of the pan to loosen the cheesecake. Turn off the oven and open the door at least 4 inches. Let the cheesecake remain in the oven for 30 minutes to cool gradually.
Cool on Rack: Remove the cheesecake from the oven and cool in the pan on a cooling rack for an additional 30 minutes.
Chill: Refrigerate the cheesecake for at least 6 hours or overnight to fully set.
Serve:
Remove from Pan: Just before serving, run a small metal spatula around the edge of the pan, then carefully remove the side of the springform pan.
Garnish: Drizzle the top with chocolate syrup and caramel syrup or topping as desired.
Store: Cover and refrigerate any remaining cheesecake.
Notes:
Crushed Cookies: You can crush the chocolate wafer cookies in a food processor or by placing them in a plastic bag and crushing them with a rolling pin.
Substitute: If you prefer, you can substitute the Twix bars with your favorite candy bars.
