Chocolate Peanut Butter Lava Cupcakes

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1/2 cup hot water
1/2 cup creamy peanut butter
1/4 cup chocolate chips for topping

Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
In a separate large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Stir in the hot water until the batter is smooth.
Fill each cupcake liner about 2/3 full with batter. Drop a spoonful of peanut butter into the center of each cupcake.
Bake for 18-20 minutes, or until the tops of the cupcakes spring back when lightly touched.
Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Once cooled, top each cupcake with a generous dollop of peanut butter and a sprinkle of chocolate chips.
