Layered Chocolate Cheesecake with Oreo Crust
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2 ½ cups Oreo cookie crumbs
6 tablespoons unsalted butter, melted
For the Cheesecake Filling:
4 (8 oz.) packages cream cheese, softened
1 cup powdered sugar
2 teaspoons vanilla extract
2 cups heavy cream
10 ounces bittersweet chocolate, chopped
For the Chocolate Topping:
¾ cup heavy cream
6 oz. bittersweet chocolate, finely chopped
1 tablespoon granulated sugar

Make the Crust:
Prepare Crust:
Finely crush Oreo cookies in a food processor.
Add melted butter and blend until the mixture is moistened.
Press the crumb mixture evenly into the bottom of a lightly greased 9-inch springform pan.
Place the pan in the freezer while preparing the filling.
Prepare the Cheesecake Filling:
Melt Chocolate:
Melt 10 ounces of bittersweet chocolate and set aside to cool.
Mix Cream Cheese:
In a medium bowl, beat the cream cheese and powdered sugar until smooth.
Whip Cream:
In a separate bowl, beat 2 cups of heavy cream until soft peaks form.
Add vanilla extract and continue mixing until stiff peaks form.
Combine Mixtures:
Gently fold the cream cheese mixture into the whipped cream until combined.
Divide and Mix:
Divide the mixture into two equal portions.
To the first portion, add the cooled melted chocolate and mix gently until combined.
Pour the chocolate mixture over the chilled crust.
Carefully spoon the remaining plain cheesecake mixture over the chocolate layer.
Chill:
Refrigerate the cheesecake for at least 1 hour to set.
Prepare the Chocolate Topping:
Make Topping:
In a medium saucepan, combine ¾ cup heavy cream, 6 ounces of finely chopped chocolate, and 1 tablespoon granulated sugar.
Stir over low heat until the chocolate is fully melted and the mixture is smooth.
Cool and Pour:
Allow the chocolate topping to cool slightly before pouring it over the chilled cheesecake.
Chill Again:
Refrigerate until the topping is set and cooled.
Serve:
Remove Pan:
Run a thin knife around the sides of the springform pan and remove the sides.
Slice and Serve:
Use a sharp, thin, non-serrated knife to cut the cheesecake into slices.
Drizzle with additional chocolate sauce if desired.

Total Time: 25 minutes (plus chilling time)
