Blueberry Bliss Cheesecake Bars — A Burst of Flavor in Every Bite!
Ingredients
Oatmeal Cookie Crust:
4 oz unsalted butter, room temp
½ cup light brown sugar
¼ cup granulated sugar
1 egg
1 tbsp bourbon
1 tsp vanilla extract
¾ cup all-purpose flour
¼ tsp cinnamon
½ tsp baking soda
½ tsp salt
1 ¼ cups old-fashioned oats
Blueberry Cheesecake Filling:
16 oz cream cheese, softened
½ cup granulated sugar
¼ cup light brown sugar
2 eggs
1 tsp vanilla bean paste (or extract)
1 tbsp bourbon
1 cup fresh blueberries
Blueberry Compote:
10 oz fresh blueberries
2-3 tbsp granulated sugar
1 tsp lemon juice
1 tbsp bourbon
Directions
1. Oatmeal Cookie Crust:
Preheat oven to 325°F. Cream butter and sugars until fluffy.
Mix in egg, bourbon, and vanilla. Combine with dry ingredients and oats.
Press into an 8×8-inch pan. Bake 18-20 mins. Cool.
2. Blueberry Cheesecake Filling:
Beat cream cheese, sugars, and vanilla until smooth.
Add eggs and bourbon, mixing well.
Stir in most blueberries. Pour over crust and bake 38-40 mins. Cool and chill 8 hrs.
3. Blueberry Compote:
Cook blueberries, sugar, and lemon juice until juicy.
Add bourbon; simmer until thickened. Chill.
4. Serve: Cut bars, top with compote, and enjoy!
