Funfetti Bundt Cake with White Chocolate Glaze
Ingredients:
For the Cake:
1 standard size Pillsbury Funfetti Cake Mix
1 box package vanilla or white chocolate pudding mix (3.9 – 4 oz, dry mix)
1 cup sour cream
1 cup vegetable oil
1 teaspoon vanilla extract
4 eggs
1/2 cup warm water
1/4 cup sprinkles
For the Glaze:
8 oz chopped white chocolate
1/2 cup heavy cream (half and half can also work)
Additional sprinkles for garnish
Directions:
Baking the Cake:
Preheat your oven to 350°F (175°C). Generously spray a bundt cake pan with non-stick cooking spray.
In a large mixing bowl, combine the Funfetti cake mix, pudding mix, sour cream, vegetable oil, vanilla extract, eggs, and warm water. Mix with a mixer until combined, but do not over mix. Ensure all dry and wet ingredients are well combined.
Fold in 1/4 cup sprinkles.
Spoon the batter into the prepared bundt cake pan.
Bake for 50-55 minutes, or until a toothpick inserted into the cake comes out clean.
Remove from the oven and allow the cake to cool on a wire rack. Once cooled, remove from the bundt pan.
Making the Glaze:
In a large microwave-safe bowl (glass works best), combine the chopped white chocolate and heavy cream.
Microwave for 30 seconds, then remove and stir well.
Return to the microwave for another 15 seconds, then stir. If needed, microwave for an additional 15 seconds and whisk until smooth.
Spoon or pour the glaze over the cooled cake.
Garnish with additional sprinkles.
