4th of July Cookie Cake
Ingredients
For the Cookie Cake:
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/3 cup all-purpose flour
1/2 tablespoon cornstarch
1/4 teaspoon baking soda
1/4 teaspoon table salt
1/2 cup semi-sweet chocolate chips
1/2 cup mini M&M’s (red, white, & blue)
1/4 cup sprinkles (jimmies)
For the Frosting:
1/4 cup unsalted butter, softened
Pinch of salt
3/4 teaspoon vanilla extract
1 cup powdered sugar
1 tablespoon heavy whipping cream
Additional sprinkles for decoration
Instructions
Preheat Oven:
Preheat your oven to 375°F (190°C). Spray a 9-inch pie plate with nonstick baking spray.
Make the Cookie Dough:
In a large bowl, beat the butter and sugars together until creamy.
Add the egg and vanilla extract and beat again until combined.
Add the flour, cornstarch, baking soda, and salt. Beat until a soft dough forms.
Stir in the chocolate chips, mini M&M’s, and sprinkles.
Bake the Cookie Cake:
Spread the cookie dough evenly in the prepared pie plate.
Bake for 17-18 minutes, or until the edges are lightly golden.
Remove from the oven and let cool on a wire rack.
Prepare the Frosting:
In a medium bowl, beat the butter, salt, and vanilla extract until creamy.
Gradually add the powdered sugar and heavy cream, beating until light and fluffy. Occasionally use a spatula to push the frosting down the sides of the bowl to ensure everything is well combined.
Decorate the Cookie Cake:
Use a piping bag fitted with icing tip 1M to pipe swirls around the outside edge of the cooled cookie cake.
Add additional sprinkles on top of the frosting before it sets.
