Dreamy Carrot Bars with Maple Frosting
Ingredients
For the Bars:
1 cup finely grated carrots
½ cup unsalted butter, melted
1 cup brown sugar
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
For the Maple Frosting:
¼ cup unsalted butter, softened
¼ cup cream cheese, softened
½ cup powdered sugar
2 tbsp pure maple syrup
½ tsp vanilla extract
Pinch of cinnamon (for garnish)
Directions
Preheat oven to 350°F (175°C). Line an 8×8-inch pan.
Mix grated carrots, melted butter, sugar, egg, and vanilla in a bowl.
Whisk flour, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
Combine dry mix into the wet mixture until just blended.
Spread batter in pan. Bake 25-30 mins or until a toothpick comes out clean.
Frosting: Beat butter and cream cheese, then add powdered sugar, maple syrup, and vanilla until smooth.
Frost cooled bars. Garnish with cinnamon and carrot shavings. Cut into squares!
