Blueberry Lime Cheesecake Cupcakes WOW! in Every Bite
Ingredients
1 ½ cups all-purpose flour
½ cup unsalted butter, softened
¼ cup granulated sugar
½ tsp vanilla extract
8 oz cream cheese, softened
¼ cup powdered sugar
1 tsp lime zest
1 tbsp lime juice
1 cup blueberry preserves
1 cup fresh blueberries
½ cup purple-tinted cream cheese frosting
Lime slices & zest (for garnish)
Directions
Prep the Crust: Preheat oven to 350°F (175°C). Mix flour, butter, sugar, and vanilla until soft dough forms. Press into muffin tin and bake 10 mins. Cool.
Make Cheesecake Filling: Beat cream cheese, powdered sugar, lime zest, and juice until creamy.
Layer: Spoon blueberry preserves over cooled crusts, pipe in cheesecake filling, and add more preserves on top.
Frost & Garnish: Top with purple-tinted frosting, fresh blueberries, lime slices, and zest. Chill for at least 1 hour.
