Cannoli Ricotta Ice Cream, A Creamy Delight!
Ingredients:
15 oz fresh ricotta cheese
Pinch of salt
½ cup sugar
½ cup inverted sugar (or ¼ cup extra sugar)
1 cup milk
1 cup heavy cream
⅛ tsp fresh nutmeg
½ tsp vanilla extract
½ tsp ground cinnamon
¾ cup chocolate chips
Directions:
Warm Base: In a saucepan, heat ricotta, salt, milk, sugar, and inverted sugar until smooth. Remove from heat.
Cool Down: Pour through a strainer into a bowl with 1 cup heavy cream over an ice bath. Mix in nutmeg, vanilla, and cinnamon.
Chill: Cover and refrigerate for 2 hours or overnight.
Churn: Pour mixture into your ice cream maker and churn according to instructions. Add chocolate chips 5 mins before done.
