Caramel Brownie Cheesecake
Ingredients:
Brownie Base:
1 package brownie mix (plus ingredients as directed on package)
Cheesecake Layer:
24 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1/4 cup sour cream
1/4 cup heavy cream
1/2 cup caramel sauce (plus extra for drizzling)
Garnish:
Whipped cream
Chocolate shavings
Instructions:
Prepare the Brownie Base:
Preheat Oven: Preheat to 350°F (175°C).
Mix & Bake: Prepare the brownie batter as directed and bake in a greased 9-inch springform pan. Allow to cool completely.
Make the Cheesecake Layer:
Reduce Temperature: Lower the oven temperature to 325°F (160°C).
Blend Ingredients: In a large bowl, blend cream cheese and sugar until smooth. Add vanilla and eggs, mixing well. Fold in sour cream and heavy cream until combined.
Pour Over Brownie Base: Pour the cheesecake mixture over the cooled brownie base.
Add the Caramel Swirl:
Drizzle & Swirl: Drizzle caramel sauce over the cheesecake layer and swirl gently with a knife.
Bake the Cheesecake:
Bake: Bake for 1 hour 15 minutes or until the center is set but still slightly jiggly.
Cool Gradually: Turn off the oven and let the cheesecake cool in the oven with the door slightly open to prevent cracking.
Refrigerate: Once cooled, refrigerate overnight.
Chill and Garnish:
Garnish: Before serving, garnish with extra caramel sauce, whipped cream, and chocolate shavings.
