Creamy Banana Pudding Cheesecake Bars
Ingredients
For the Crust:
1 ½ cups (150g) gluten-free graham cracker crumbs
¼ cup (50g) light brown sugar
6 tbsp (85g) unsalted butter, melted
For the Filling:
16 oz cream cheese, room temperature
14 oz sweetened condensed milk
3 large eggs
1 cup mashed ripe bananas
1 tsp vanilla extract
For the Topping (Optional):
Fresh banana slices
Whipped cream
Directions
Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment.
Mix crumbs, sugar, and melted butter. Press into the pan and bake for 10 mins.
Beat cream cheese and condensed milk until smooth. Add eggs, bananas, and vanilla. Blend well.
Pour over crust and bake 30-35 mins until set. Cool completely.
Chill in the refrigerator for 2 hours.
Cut into squares, top with fresh banana slices and whipped cream. Enjoy!
