Irresistible Toffee Caramel Dream Cheesecake
Ingredients:
For the Base:
1 1/2 cups cookie crumbs (Digestive or graham crackers)
1/4 cup melted butter
For the Filling:
8 oz cream cheese, room temp
3/4 cup powdered sugar
3/4 tsp vanilla extract
1 cup cold heavy cream
1/4 cup toffee bits
1 tbsp gelatin + 2 tbsp milk
For the Topping:
Caramel sauce
1 cup broken chocolate caramel bars
Instructions:
Make the Crust: Mix cookie crumbs and melted butter. Press into a 7-8 inch pan. Chill for 20 minutes.
Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Separately, whip cream until stiff peaks form.
Gelatin Mix: Dissolve gelatin in warm milk. Blend with a small portion of cream cheese mix, then fold into the rest. Gently fold in the whipped cream and toffee bits.
Assemble: Spread filling over the crust, smooth the top, and chill for 4-5 hours or overnight.
Top & Serve: Drizzle with caramel sauce and sprinkle chocolate caramel pieces. Enjoy!

Let cream cheese come to room temp for a smooth blend.
For best results, chill overnight.
