Strawberry Cheesecake Rolls
Ingredients:
1 package (8 oz) cream cheese, softened
¼ cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup fresh strawberries, diced
2 tablespoons granulated sugar
1½ cups crushed shortbread cookies or graham crackers
¼ cup unsalted butter, melted
6 large crepes or thin cake layers (store-bought or homemade)
Powdered sugar, for dusting
Instructions:
Prepare Cheesecake Filling
In a bowl, beat softened cream cheese, ¼ cup granulated sugar, and vanilla extract until smooth and creamy.
Whip Cream
Whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Macerate Strawberries
Mix diced strawberries with 2 tablespoons of sugar and let sit for 10 minutes to release their juices.
Create Shortcake Layer
In a separate bowl, combine crushed shortbread cookies (or graham crackers) with melted butter until it resembles wet sand.
Assemble Rolls
Lay out a crepe or thin cake layer. Spread a layer of the cheesecake filling evenly, sprinkle with the shortcake mixture, and add a line of macerated strawberries.
Roll the Crepe
Roll the crepe tightly to form a sushi roll shape. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to set.
Slice and Serve
Once chilled, slice the rolls into 1-inch pieces. Dust with powdered sugar before serving for a sweet finish.
