Strawberry cheesecake swirl
Ingredients :
For the crust:
• 2 cups of graham cracker crumbs
• 1/4 cup unsalted butter, melted
For the cheesecake filling:
• 24 oz (680g) cream cheese, softened
• 1 cup of granulated sugar
• 1 cup of sour cream
• 1 teaspoon of vanilla extract
• 3 large eggs
• 1/4 cup puree strawberries
For the strawberry swirl:
• 1/2 cup of strawberry puree
• 2 tablespoons of sugar
For the Topping:
• Fresh strawberries
• Whipped Cream
Instructions :
Step 1: Prepare the crust:
1. Preheat your oven to 325°F (163°C). Greasing a 9 inch spring frying pan.
2. Combine graham cracker crumbs and melted butter Press firmly the mixture in the bottom of the pan.
3. Bake for 10 minutes then let to cool.
Step 2: Make the cheesecake filling:
1. In a large mixing bowl, beat the cream cheese until smooth.
2. Add sugar,whipping cream and vanilla extract,mix until just smooth
3. Add the eggs one at a time, mixing carefully after each addition.
4. Pour the puree strawberries and gently swirl through the mixture.
Step 3: Strawberry Swirl:
1. In a small saucepan, combine mashed strawberries and sugar. Simmer until slightly thickens, about 5 minutes. Let it cool down.
2. Drop spoonfuls of strawberry mixture over the cheesecake filling and use a knife to create a swirl pattern.
Step 4: Bake the cheesecake:
1. Pour cheesecake filling over crust.
2. Bake for 60-70 minutes or until the center is set.
3. Let the cheesecake cool in the oven with the door slightly open for 1 hour, then refrigerate for at least 4 hours.
Step 5: Add toppings:
1. Top with fresh strawberries and a spoonful of whipped cream before serving.
