White Chocolate Peach Cookies 🍑🍪
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup peach preserves
1 cup white chocolate chips, melted
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the egg and vanilla extract, and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, about 2 inches apart.
Using your thumb or the back of a spoon, make an indentation in the center of each dough ball.
Fill each indentation with a spoonful of peach preserves.
Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once the cookies are cool, drizzle the melted white chocolate over the top of each cookie.
Let the white chocolate set before serving or storing the cookies in an airtight container.
