Classic Italian Panna Cotta with Berry Sauce

A silky Italian dessert made with cream and vanilla, topped with a bright homemade berry sauce. Simple ingredients, elegant result.

Prep time: 20 minutes
Chilling time: 4–6 hours

Ingredients

For the panna cotta

  • 2 cups / 480 ml heavy cream
  • ½ cup / 120 ml whole milk
  • ⅓ cup / 65 g granulated sugar
  • 2¼ tsp / 7 g unflavored powdered gelatin
  • 3 tbsp cold water
  • 1 tsp pure vanilla extract
  • Pinch of salt

For the berry sauce

  • 2 cups / 280 g mixed berries, fresh or frozen
  • ¼ cup / 50 g granulated sugar
  • 1 tbsp fresh lemon juice
  • 2 tbsp water
  • Fresh berries, for serving

Detailed Instructions

1. Bloom the gelatin.
Pour 3 tablespoons of cold water into a small bowl. Sprinkle the powdered gelatin evenly over the surface rather than dumping it into one spot.

Leave it untouched for approximately 5–10 minutes. The gelatin will absorb the water and become thick and spongy. This process is called blooming and helps the gelatin dissolve evenly later.

2. Heat the cream and milk.
Pour the heavy cream and whole milk into a medium saucepan. Add the sugar and a small pinch of salt.

Place the saucepan over medium-low heat and stir occasionally until the sugar has completely dissolved.

Heat until the mixture is steaming and small bubbles begin appearing around the edges. Do not allow it to reach a full boil. Boiling isn’t necessary and can negatively affect the delicate texture.

3. Add the vanilla.
Remove the saucepan from the heat and stir in the vanilla extract.

For an even richer vanilla flavor, you can use the seeds from a vanilla bean instead of extract.

4. Dissolve the gelatin.
Add the bloomed gelatin directly to the hot cream mixture.

Whisk gently for about 1 minute, making sure the gelatin completely dissolves. There shouldn’t be any visible pieces or lumps remaining.

Avoid vigorously whisking because you don’t want to incorporate lots of air bubbles into the panna cotta.

5. Strain the mixture.
For an especially smooth result, pour the cream mixture through a fine-mesh sieve into a large measuring jug or bowl.

Allow it to cool for approximately 10 minutes, stirring once or twice.

6. Fill the molds.
Divide the mixture evenly between 6 small glasses, ramekins, or dessert molds.

Pour slowly to minimize bubbles on the surface. If bubbles do appear, gently remove them with the tip of a spoon.

7. Refrigerate until set.
Place the panna cotta in the refrigerator and chill for at least 4–6 hours.

For the best results, prepare it the night before and allow it to set overnight.

The panna cotta is ready when the center is set but still has a gentle wobble when you lightly shake the glass. It shouldn’t be firm like gelatin candy.

Make the Berry Sauce

8. Cook the berries.
Place the mixed berries, sugar, lemon juice, and water in a small saucepan.

Cook over medium heat for 5–8 minutes, stirring occasionally. As the berries warm, they will release their juices and begin breaking down.

Gently crush some of them with the back of a spoon while leaving a few pieces intact.

9. Reduce the sauce.
Lower the heat slightly and continue cooking for another 3–5 minutes, until the sauce becomes slightly thicker and glossy.

Remember that it will thicken further as it cools, so don’t reduce it until it becomes jam-like.

Remove from the heat and allow it to cool completely.

10. Chill the berry sauce.
Transfer the cooled sauce to a container and refrigerate until you’re ready to serve.

Don’t pour warm berry sauce over cold panna cotta because the heat can soften its delicate surface.

Assemble and Serve

11. Add the berry topping.
Once the panna cotta is completely set, spoon a generous amount of cold berry sauce over each portion.

Top with a few fresh strawberries, raspberries, blueberries, or blackberries.

12. Serve cold.
Serve directly from the refrigerator.

The perfect panna cotta should be silky, creamy and delicate—not rubbery or overly firm. Each spoonful should gently melt in your mouth, while the slightly tart berry sauce balances the richness of the vanilla cream. 🇮🇹🍓🍮
